George Moros is the Chef de Cuisine at Erego Beach Club in the beautiful island of Ios, Greece, and one of the country’s notable chefs. Born and raised in the island of Spetses, where he grew up around all-things natural. His favorite cuisines are Greek and Japanese that pair in a magical way. Chef George is passionate with what he does and a master of precision when it comes to knife skills. Previously at Nobu London for 2 years, before he fell in love with Ios that lead to his collaboration with Xamogela Ios. The rest is history.
- What inspires you every day?
Definitely the view of the landscape and the unique treasures swimming carelessly in the Aegean sea.
- What are the signature dishes that you created at Erego Beach Club?
At the snack menu you can try our mouthwatering Erego bowl or Love & lime club sandwich with grilled tempeh, guacamole and local red peppers. Vegan pesto for the all day menu. You will find our delicious Erego salad with paper thin roots and pickled persimmons, or the Moussaka balls. All of which are signature dishes.
- Where did you begin your culinary journey?
It started back in 2004 when I joined the culinary school in Athens. Since then I have never stopped working hard, experiment on new things and develop my taste and skills to be a better version of myself.
- If your menu was a story book, what kind of story would it be telling?
It would probably be a biographical story because my culinary Career is reflected on our menu.
- What’s your personal favorite dish on the menu?
Hard to answer this one, but I’ll go with ‘Gyoza Spinach Pie’. Every time I taste them, I’m transported to the flavors of my childhood when my grandmother would bake pies in our backyard’s wood oven.
- Has cooking always been your passion?
Even though I used to cook since I was 18 years old, I did it mainly for myself, as a student in Athens when I was studying to become a car mechanic. As I was doing that, I think I started falling in love with the art and science of cooking. Eventually, it became my passion.
- What do you love most about Erego Beach Club?
My coworkers because I’m a big team spirit player.

9. Please share your top tips for aspiring chefs:
I would advise them to take time and dedicate a big amount of energy to learning the basics. Be respectful. Appreciate the experts who came before you, and remember this isn’t a TV show. Regard everyone you meet along the way as a teacher.
